Cheeseburger Pelmeni
We recently did a pop up that we lovingly titled, “Will it dumpling?!” where we dumplified (if that’s not a word it should be) our favorite dishes. These pelmeni are a result of this! They truly taste like a cheeseburger without ever firing up the grill! We love it with griddled onions as we suggest here, but if you like them raw, we fully support you. Of course, use a different cheese like Swiss or blue, add cooked mushrooms - you do you.

SERVING SIZE 30 dumplings
SPECIAL EQUIPMENT broiler (optional)
INGREDIENTS
1 tablespoon ketchup
1 tablespoon mayonnaise
1 teaspoon pickle juice
1 teaspoon yellow mustard
1 bag (8.8 oz) Kachka Siberian-Style Pork & Beef Pelmeni Dumplings
2 tablespoon tomatoes, small diced
2 tablespoon dill pickles, small diced (or jarred relish)
½ small white onion, griddled and small diced
1-2 slices Organic Valley American cheese (or your favorite burger cheese!)
2-3 leaves bibb lettuce, chiffonade or finely chopped
METHOD
Make the special sauce. In a medium bowl whisk together the ketchup, mayonnaise, pickle juice, and mustard. Set aside.
Boil and drain dumplings according to package instructions. While dumplings are cooking, turn on the broiler and adjust the oven rack so that it is in the second slot from the top.
Place the drained dumplings in the mixing bowl with the special sauce and toss the dumplings to coat them. Add tomatoes, pickles, and onions into the mixing bowl and gently mix together with the dumplings.
Transfer the contents of the bowl to an oven-safe serving bowl and place the slice(s) of cheese on top of the dumplings. Place the dish in the oven and broil on high for 1-2 minutes or until the cheese is fully melted and starting to bubble.
